make this side dish your main attraction

We have tacos alot for dinner here. It's an easy gluten free meal that we all enjoy, I was however trying to come up with a side dish to go with them. I looked online for some good mexican rice recipes but none of them looked that great so I decided I'd try my own. Honestly, I can't believe how good this is and it's gotten rave reviews.

I really do think part of it is because I throw everything in the rice cooker and the rice just comes out amazing. Don't have a rice cooker? Shame on you. Actually I didn't have one either until someone was getting rid of one. No worry, just make your rice separately but use chicken broth NOT water (chicken broth adds a ton more flavor)and then combine other ingredients and rice and cook through.

MB's Mexi-Rice
Ingredients
1 can black beans, mostly drained
1 can diced tomatoes, mostly drained (spice it up and get it with jalapeno peppers if you like)
1 small can corn, drained (optional)
1 cup long grain rice
1 can chicken broth
1 T. butter
1/4 t. ground cumin
1/4 t. chili powder
heaping 1/2 t. minced garlic
2 shakes onion powder
1/4 t. freeze dried cilantro
pinch of salt
1 cup shredded cheddar cheese, divided in half

Directions:
1. Combine all ingredients, except cheese in the rice cooker and cook.
2. Stir in 1/2 cup of cheese in rice cooker after mixture is done and transfer to serving dish once cheese has melted.
3. Top with remaining cheese, serve immediately.

And yes, we're having this for dinner tonight. I can't wait!

that's exactly how i feel after eating these meals, they're so filling but not 'heavy'. I think my body is just saying, "thank you"! (:

yummy!! i make something like this but add cooked ground beef to it and top it with lettuce and tomatoes. it's kind of tacos combined with your rice dish. yup, i'm hungry now.
