and So Not the Drama Apple Pie Cups. I had to change this, the recipe called for unsweetened applesauce. What? For dessert? I got a can of apple pie filling instead and added the whipped cream. I'm pretty sure you can't call it a dessert if there's no sugar in it!
Fish are our Friends Flatbreads (spelt tortillas)
and Princess Pretzel Parfaits (gluten free pretzels, Glutino brand and very good)
The best recipe so far...the berry salad. It was quick and delicious. Rachel enjoyed shaking up the dressing too. It called for mandarin orange slices but she told me she was "not a big fan of those". Try it! Plus, what's cooler than goldfish crackers in your salad?
Be Our Guest Berry Salad from the Disney Magic Kitchen cookbook
Ingredients:
1/4 cup orange juice
1 tablespoon salad oil
2 teaspoons honey or dijon mustard
1 teaspoon sugar
1/4 teaspoon salt
4 cups torn lettuce
1 1/2 cups fresh blueberries, raspberries, quartered strawberries and canned mandarin orange sections, drained
a handful of goldfish crackers
Directions:
1. To make dressing, put OJ, oil, mustard, sugar and salt in a screw-top jar. Tightly cover and shake well. Put lettuce in a medium bowl, drizzle the dressing over lettuce and toss using tongs. Divide lettuce among salad plates/bowls.
2. Put fruit on the lettuce. Sprinkle with crackers. Serve immediately.
Makes 4 side-dish servings.

ok, now i want to make that salad - what a super cute cookbook! and kudos on the apple pie filling - i would have never thought of that! that would be a great dessert for sky, since it's gf and apples are one of the few fruits he will actually eat :)
ps - rachel is so cute in that picture!
The apple pie filling was really good. I just warmed it up in the microwave, topped it with whipped cream and some crushed up cinnamon chex which are now gf and really good. I eat them for breakfast alot now because it tastes so normal!
