Do you have any nyquil? I could use a little pick me up

Crockpot season is here, yippee! Here's a great sweet and sour pork recipe to throw together in the morning and let it cook away all day. (Just use wheat free soy sauce to make this gluten free.)

Sweet n Sour Pork

Ingredients:

2 lbs. lean pork, cut into strips

1 green bell pepper, cut into strips

1 medium onion, thinly sliced

1 medium celery stalk, sliced on bias

1 medium carrot, sliced on bias

1/4 cup brown sugar

1 8oz. can tomato sauce

2 Tbsp. cider vinegar

1 Tbsp. soy sauce

1 tsp. salt

2 Tbsp. cornstarch

1 14oz. can pineapple chunks, with 1 cup juice reserved


Directions:

1. Place the pork, pepper, onion, celery and carrot in the crockpot.

2. In a medium bowl, whisk together the brown sugar, tomato sauce, cider vinegar, soy sauce, salt and cornstarch. Add in 1 cup of pineapple juice.

3. Pour sauce over contents in crockpot.

4. Cover and cook on low for 6 hours or 3-4 hours on high.

5. One hour before serving, add the pineapple chunks and mix thoroughly.


Serve over some steamed white or brown rice. This makes quite a bit and is delicious for leftovers the next day. Enjoy!

I like this recipe because I usually have all the ingredients on hand except maybe the pork.

yummy! i love the crock pot and i love the sweet and sour combo. must get pineapple(That's the only thing i don't always have on hand).

oh goodness, let's just say we've been down and out with a virus(nasty gingivitis/canker sore thing) and then two trips to the Er with Gabe. yeah. homeschooling? we're being quite lazy at the moment. and yes, i will eventually update my blog..maybe. :)
