how much you wanna make a bet I can throw a football over them mountains?



I started this post in April and forgot about it. This was a thrown together side dish to use up some chickpeas and it came out really nice. Nothing fancy just healthy. :)

MB's rice pilaf

Ingredients:

olive oil
1/4 purple onion
1-2tsp. minced garlic

2 cups long grain rice
1 can chicken broth+water to make 2.5 cups
handful cut up fresh broccoli
1/2 can chickpeas

salt and pepper to taste

Directions:

1. Heat oil in small skillet on medium heat. Add onion and garlic, cook about 5 minutes, until tender.

2. Add enough broth to skillet to cover onions, stir, loosening bits on pan. Pour mixture into rice cooker. Add remaining ingredients and stir to combine.

3. Turn on rice cooker and voila!

You can also make this on the stove. Just bring broth/water to a boil, put all ingredients into the pan and cook on stove according to the rice instructions on package. I don't recommend making this with instant rice, it wouldn't cook long enough.

and oh my gosh, i am STILL laughing at your title even as i type this :) mb, i miss you! we need to plan a meetup...i so miss those big ole cedarville laughs!!
