This is a really easy yummy inexpensive twist on the tuna noodle casserole. One of Rachel's very favorite meals. You can tell I approximate alot with my portion ranges. (:
Tuna Rice Casserole
Ingredients:
one can tuna, drained
1 1/2-2 cups cooked rice
1/2-1 cup frozen mixed veggies
taco seasoning-amount depends on your preference
1/3-2/3 cup ranch dressing
1 cup shredded cheddar cheese, divided in half
broken up potato chips or tortilla chips
Directions:
1. Preheat oven to 350F. Coat 1 1/2 quart baking dish with non-stick spray. Mix together in dish, tuna, rice, veggies and taco seasoning.
2. Add in dressing and 1/2 cup cheese, mix thoroughly. Top with chips and remaining cheese.
3. Bake in oven for 15-20 minutes, until browned on top and heated through.
Serves 4-6.

yummy! talk about a great way to use up leftovers too. i may have to have rice tonight, so we can have the casserole later this week:)
that sounds good! i always have leftover rice - now i know what to do with it :)
